I feel like a million bucks today.

Somehow the words escape me.  I just wrote two short blogs, one after another, trying to convey this thankfulness.

It is the darkest part of life that defines the contrast between darkness (sadness, fear, anger, violence) and light (love, laughter, joy, happiness).

As much as I’ve not personally experienced much darkness, I can still bear witness to the most horrific places on the dark end of the spectrum.  I know how bad it can be.  Naively and blessedly, I am forever grateful that this lifetime of mine falls more upon the light side of this spectrum.  I have always had a knack for silver linings.

Truths

If you speak in absolutes under the guise of Truth, you come off as a child who believes he knows more than everyone else. You MAY very well know more than most people, but that alone is not a distinguishable feat. You do NOT know more than all people- because to begin to claim that you resolutely know what is Truth is to thrust yourself into a position that does not relegate the option that sometimes inevitably, you must be wrong.

Beans n Rice n Tortillas!!!

Yay for vacations!

We made a wonderful Mexican dinner…

Since you want to know, I’m going to tell you how I made stuff!

Black Rice: 

Soak the rice in water for several hours before you cook.  Black rice still has its husk, so it needs more water and to cook longer.  Usually for white rice in the rice cooker (my most favorite kitchen gadget), you use one cup of rice to two cups of water… But with black rice, you have to use one cup of rice to 2.5 or 3 cups of water.  After it cooks, I let it stay warm for several hours in the cooker.  Then later, I add a spoonful of vegetable shortening, some salt to taste, and chili powder.

Refried Black n White Beans:

I soaked black beans and navy (white) beans for several hours.  Then I put them in a pot and boiled them in water with salt for several hours until they were soft. I left a little of the water from boiling and threw the beans and water in the blender.  Blended them until they were the desired consistency.  Threw the blended beans back in their pot.  Added some vegetable shortening, curry, chili powder (all to taste).

Homemade Tortillas:

Mix 6 cups of flour, two tablespoons (or more) of salt, 2 teaspoons (or more) of baking powder in a big bowl.  Add 1/3 - 2/3 cups of vegetable shortening or lard.  Mix in with your fingers, breaking the shortening clumps up well.  Slowly stir in 2 and 2/3 cups of warm water, kneading it with your hands.  The dough should be soft and easy to ply and keep in balls, but not completely sticky.  Add flour if it’s too sticky.  Pull into small balls and allow the balls to sit for 15 minutes.  Heat your skillet to a hot temperature and roll out the tortillas with a rolling pin.  They should be flat and thin, and when you put them on the skillet, they should bubble almost immediately.  As soon as one side begins to brown, flip it, and leave it on the skillet for about a minute.  Cooking for both sides shouldn’t exceed longer than a minute– otherwise you end up with chips and not tortillas you can wrap things in!!

How can something SO beautiful be so evil?

I know, you say that about me ALL the time.

So, I told you about my ground cover (Erodium cicutarium aka Common Stork’s Bill aka Redstem filaree) on my front lawn, right?  I posted pictures of it on Myspace, and my mom immediately told me I needed to get rid of it.

But why?!  Oh, why, mom?! I think it’s SO pretty!

Well, I can now tell you why.  It’s pretty aggressive, and it doesn’t live long.  It blooms, spreads, and then dies.

Then I get a big brown spot in my lawn.  And no grass.  Only dead Redstem Stork’s Bill.

I ended up pulling them all up from my lawn last night.  Here’s what they look like out of my lawn.

I had an unusual experience driving home from work yesterday.

I’m sitting on 8th Avenue, waiting for a light to turn green. I hear a man screaming as loud as he can, hooting and hollering. Singing, if you will. Serenading.

“Well that’s a bit odd,” I think to myself.

Sort of peeking around, I see no pedestrians staring up at a balcony, with no swooning girl looking down at him in bewilderment.

I see no ragged beggars on the corners seeking attention. No Jehovah’s Witness men on bicycles touting Jehovah’s Word. No jousting actors fighting for a dramatic end.

“This hooter and hollerer must be a driver,” I conclude. I mean, what other logical explanation is there?

To my astonishment, it WAS a driver. And as he drove past me, I realized he was hooting and hollering at me.

Blood rushed to my cheeks even in the ninety degree weather. He’s looking at me, driving next to me shouting, “You’re BEAUTIFUL! I love you! I love beautiful people!!!!”

Certainly I’m not the only person to have noticed this odd behavior. Everyone is now checking me out as they pass me.

He continued to holler at me as 8th Avenue dumped into 6th. He weaved in and out of traffic to prove his masculine ability to drive like a crazy (in love) man.

Finally, I gasped for air and realized I had been holding my breath when he exited 6th on Wadsworth. I had been nervous that he was going to crash demonstrating how beautiful I am to him.

If the answer is yes, then please allow me to introduce to you my new favorite animal:

Weedy Sea Dragon

Meet my new favorite animal, a weedy sea dragon.

Here’s what I DO know. They’re from the waters near Australia, and the males carry their babies.

Sorry, wombats. You’ve been moved down on the favorite animal category. Conveniently, wombats are also from Australia.

Perhaps I was an Australian in a past life and recall being very fond of these animals from back then. Or maybe I just like animals that I’ll possibly never meet.

For the record, I was also thinking recently (last night, while watching a PBS special on them) that rhinoceros(es?) are rather adorable, too. If you’re into big pachydermy goodness.
